Healthy Steel Cut Oatmeal Cookies

Children prefer cookies made of chocolate chips or dry fruits than plain cookies. Healthy steel cut oatmeal cookies are made with whole grain flour and applesauce instead of butter or oil. They are also made of either brown sugar Splenda or very little raw sugar.  Thus, they are healthy, and kids love to munch on them. The recipe for healthy steel cut oatmeal cookies is given below.

Healthy steel cut oatmeal cookies

Ingredients

  • Turbinated sugar – 1 cup (or brown sugar Splenda – ½ cup)
  • Eggs – 4
  • Applesauce – 2 cups (or butter – one and a half cup)
  • Vanilla – 2 teaspoons
  • Whole grain flour – 3 cups
  • Steel cut oats – 4 cups
  • Salt – 1 teaspoon
  • Baking powder – 2 teaspoons
  • Baking soda – ½ teaspoon
  • Cinnamon – 4 heaping teaspoons
  • Chopped walnuts – 1 cup
  • Chopped dates, diced apples, raisins, or chocolate chips – one and a half cup

Preparation

1.     Preheat the oven for 375 degrees F.

2.     Beat the egg and keep it aside.

3.     In a large bowl, add sugar, vanilla, beaten egg, applesauce, and mix well to dissolve the sugar.

4.     After the sugar is dissolved, add whole grain flour, steel cut oats, salt, baking powder, baking soda, cinnamon, chopped walnuts, and mix well to form a uniform mixture.

5.     To the above mixture, add raisins, dates, diced apples, chocolate chips, and stir well.

6.     Coat the baking sheets with cooking spray or non-stick baking mats or parchment paper.

7.     Take a big spatula or spoon, and place the mixture on the baking sheets. Make sure to maintain a distance of two inches between the cookies.

8.     Place them in the preheated oven at 375 degrees, and bake them for 15 minutes.

9.     Remove cookies from the oven, and place them on the rack to cool.

10.   Store the cookies in an airtight container or zip lock containers.

11.   For longer storage, place them in the freezer or refrigerator.

Offer these healthy steel cut oatmeal cookies, when kids wish to have them.
